HotelShowOn Friday February 10th, 2017, the Hospitality and Tourism Management Department hosted the 4th Annual “Love Is…A Full Plate” charity dinner, silent auction and book signing, which benefited End Hunger CT! Food writer, food stylist, and recipe developer and tester, Tracey Medeiros, attended and spoke at the event in support of End Hunger CT! Tracey also interacted with the guests and signed some copies of her recent cookbook, The Connecticut Farm Table Cookbook, which features 150 delicious recipes inspired by the farm-to-table movement.

Focusing on Connecticut History and the farm-to-table movement, guests were treated to a five-course dinner, which took them on a journey through the first 500 years of CT food history; from the arrival of the pilgrims to the recent influence of immigrants. During the cocktail hour, the menu reflected the many counties in Connecticut and featured a dish inspired by each. With this guests were also able to sample some of the recipes from Tracey Medeiros’ cookbook, including Chilled Green Gazpacho shooters and decadent Blueberry Tea Cakes, to name a few. Along with tasting the counties and eating through CT history, Guests were also able to take part in both a silent and live auction which included various baskets and amazing live auction items, such as Knicks tickets and a weekend stay in the Dominican Republic for 10. The Master of Ceremony and president of the Capstone Class, Joseph Anquillare, not only helped the crowd journey the rich Connecticut history through storytelling, but his time period costumes certainly helped convey the story and added some extra fun to the dinner. Along with this, students also presented a commemorative gift to the owner of Garafalo Markets (Shoprite CT) Harry Garafalo, who has been a generous supporter of not only Love is…A Full Plate, but of the HTM Department as a whole.

This amazing event was prepared and executed by the students in the year-long Capstone class, HTMG 4420: Resort Development and HTMG 4480: Resort Operations & Property Management.
