Study Abroad 2015 – Tuscany, Italy
Over the summer, students in the Hospitality and Tourism Management Department studied abroad at the Tuscany Campus in Prato, Italy for our second summer session. During the four week program, students took HTMG 3305 Wine Appreciation and HTMG 3307 Cultural Food and Cuisine to fully immerse themselves in the Italian culture. As part of the wine appreciation course the students visited different vineyards including Capezzana, Volpaia and Ruffino where they learned the fermentation process and bottling processes and had a full tasting experience.
The Cultural Food and Cuisine course allowed the students to work in teams to prepare multi-course meals that expressed a story through food and experience. Different themed dinners included The Great Depression, The History of the Tomato and the History of Basil. In addition, students traveled to the World Fair in Milan where they got to see the cultures of different countries by visiting their part of the fair and local biscotti and pasta shops throughout their program. To end the entire experience the students experienced a traditional Italian meal which included 10 courses that allowed students to test their knowledge on proper food and wine pairings and reflect on their time in Italy.
